Carrot Soup

A very simple and tasty vegetable soup that works in both season. In this soup, the basic ingredient  you need are carrots, yellow carrots makes great puree. The red carrots have more water, they use in salad and pickles as red carrots are ideal for salads. The ginger are coriander elevate the carrot, the recipe of this vegetable soup will definitely make its place in you cookbook and for sure you need to make it again and again.

Never buy shop made soups because frankly they are awful. They do not have any flavor, are over salty, rely too much on a potato base for thickness and volume. Home made soups are more tastier, healthier and less expensive. To make this soup you need the following items.

Ingredients:

1 onion, diced

1 clove garlic, minced

1 kg carrots, peeled and sliced 1 cm thick

50g butter (for flavor)

1 tablespoon of sunflower oil

1/2 teaspoon of cardamom powder

2 teaspoons of ground turmeric ( a wonder spice health wise)

2 tbs chopped chives (optional)

6g of fresh ginger, minced

1 chicken

4 cups water (add more if soup is too thick )

1/2 - 1 teaspoon red vinegar (to add flavor of your soup)

1/3 cup cream

About 12 stalks of fresh coriander stems and leaves

Salt to taste

Yogurt for garnish

Method:

Peel and slice the carrots and set them to simmer in salted water until they are tender. Using a sieve, drain them but do not discard water, instead save the water in another pan. Process the carrots until they are a smooth pulp. Add warm water in these pulps in a bowl and make its consistency thick enough like soup. Add now some lemon juice, salt and sugar. Wash, dry and chop the coriander finely with ginger and seed less chillies and slice those lengthwise too. Heat olive oil in a small pan and quickly sear the ginger and chilies very little for just colored but not browned. Mix the coriander into the soup.

Serve the finished soup in individual bowls. Garnish with some yogurt, ginger and chilli and drizzle a drop or two of the oil. A very tasty and yummy homemade carrot soup is now ready. Serve immediately or even cold.

Hearty Vegetable Soups



SOUTHERN VEGETABLE BEEF SOUP


4 cups potatoes, peeled and cubed


6 cups water


1 lb. lean ground beef


5 tsp beef bouillon granules


1 can (10 3/4 oz) condensed tomato soup, undiluted


2 cups frozen corn


2 cups frozen sliced carrots


2 cups frozen cut green beans


2 cups frozen sliced okra


3 tbsp dried minced onion



In a large stew pot or a Dutch oven, bring the potatoes and water to a boil.  Cover and cook for about 15 minutes until potatoes are tender.  Menwhile, cook beef in a large skillet until it is no longer pink.  Drain well and rinse with hot water.  Add the bouillon, soup, all vegetables, onion and beef to the potato pot.   Return to boiling.  Reduce heat and simmer, uncovered, for about 10 minutes or until soup is heated through.  Stir occasionally during the cooking  process.




CARAWAY BEEF-VEGETABLE SOUP



2 bacon slices, cut into pieces



1/2 lb round steak, cut into small pieces



1 can beef broth



1 can diced tomatoes, undrained



2 cups water



1/4 cup chili sauce or catsup



1/2 tsp caraway seed



2 cups coarsely chopped cabbage



1 cup sliced carrots



1/4 cup quick-cooking barley



In a 3-qt saucepan, cook bacon over medium heat until crisp.  Add beef; cook, stirring, until beef is browned.  Stir in broth, tomatoes, water, sauce and caraway seeds.  Heat to boiling.  Reduce heat and simmer, uncovered, for 10 minutes.  Stir in cabbage, carrots and barley.  Continue to simmer about 20 minutes until beef and barley are tender.


Soup Recipes

Delicious soups can be as nourishing as the elements you put on the pot. Meat, poultry and seafood provide the much-needed protein in both the broth and as main or supplementary ingredient.
